If you've ever tried to make Macarons you'll probably know how fiendishly difficult they are to get right. There are cookery schools that offer lessons and some people have had success using them but very often find it impossible to replicate their success in a professional environment, using professional ovens and equipment, in their own kitchens.
All South Coast Macarons are made using standard equipment and as such I'm now happy to start offering lessons in my kitchen which will hopefully give you the best chance of success in your own!
A big part of the workshop will be to understand why macarons can turn into macawrongs. You'll learn which almond is best to use, why meringue can change with the weather, literally, and the all important when to Stop Mixing! You'll learn the Italian method which will require you to have a Stand Mixer and Candy Thermometer so please do bear that in mind. The Italian method provides the most stable meringue which makes it the most 'user friendly' but if you prefer to use the French method you'll still learn enough to have the best chance of success for yourself.
We'll start with a chat about macarons and the do's and don'ts and follow with a quick demonstration after which you'll get to make your own!
Also included will be a brief overview of fillings, buttercream and ganache, and colours, and at the end you'll leave with the 24 macarons you have made!
Prices per 3 hour workshop are - £65 per person.
As space is limited I'll only ever teach 2 future macaron bakers at a time and never fear, if you book a single lesson it'll just be you and me!
